Ingredients

4 serving

  • Flour: 300 grams (about 2 cups)

  • Water: 150 grams (about ¾ cup minus 1 tablespoon)

  • Salt: ½ teaspoon (about 3 grams)

  • Butter and oil mixture: make sure there is more oil (to be drizzled later)

Filling Ingredients:

  • 8 ounces ground beef

  • ½ small onion, finely chopped

  • ¼ teaspoon garlic powder

  • Handful of chopped spinach (optional)

  • Salt and pepper to taste

Filling Instructions:

  1. Cook the ground beef in a pan until browned.

  2. Add the chopped onion and cook until softened.

  3. Add the spices (salt, pepper, garlic powder) and cook to combine.

  4. Stir in the spinach and cook until wilted.

  5. Make sure the filling is dry before using.

Dough Instructions

  1. Combine the flour, water, and salt in a bowl, then knead the dough until smooth, about 8 to 10 minutes.

  2. Divide the dough into 4 equal pieces.

  3. Oil each dough ball, cover with plastic wrap, and let rest for 45 minutes.

  4. After resting, stretch each ball as thin as possible, making it almost see-through.

  5. If the edges are too thick, trim them.

  6. Drizzle the butter and oil mixture on top, then add your filling along the edge.

  7. Roll the dough tightly into a log, and stretch it again to keep it even.

  8. Coil the log into a spiral to form one large Barak.

  9. Once spiraled, drizzle more oil on top.

  10. Preheat the oven to 450°F and bake until golden brown, about 15 to 20 minutes.

Tips

A little filling is enough to achieve the prefect flake, and make sure filling is fully dry.

Too much filling can make it heavy and prevent it from getting crisp and flaky.
