Bakery style Vanilla Burnt Basque Cheesecake


Ingredients


  • Cream cheese: 450 g (softened)

  • Caster sugar: 100 g


  • Condensed milk: 120 g


  • Cornstarch: 15 g

  • heavy cream: 200 g

  • Yogurt (dahi): 100 g

  • Vanilla extract: 2 tsp

  • Lime juice: 1 tsp

  • Salt: a pinch


Note:

If you do not have caster sugar just add your granulated sugar in a food processor or blender and pulse a couple of times, until it reaches a fine, but not powdery, consistency.  



Instructions 


1. Preheat the oven to 450°F (top and bottom heat). 

2. Place parchment paper inside an 8-inch loaf pan, making sure extra paper hangs over the sides so you can lift the cheesecake  out easily later.

3. Blend all ingredients until smooth.

4.Pour into the pan and tap to release air bubbles.

5. Bake for 30-35 minutes until the top is dark brown and the center is slightly jiggly.

Cool completely, then refrigerate for at least 6 hours before serving.
